Combine rice flour, coconut milk, sugar, salt and cinnamon in a bowls and create a thick batter.
Add pineapple and cover with batter.
Heat cooking oil in a frying pan on medium heat and shallow fry the coated pineapple rings for about 2-3 minutes on each side or until golden brown.
Drizzle some powder sugar/ honey
Add scoop of ice cream for flavor boost.
