Bitter gourd Brown Curry

400g bitter gourd
2 tbls MA's Organic Brown Curry Paste
200ml MA's Organic Coconut Milk
1 tbls oil
Salt to taste
 
 

Step 1

Wash, cut and slice the bitter gourd into thin slices.

Step 2

Heat oil in a sauce pan on medium heat and add red curry paste, stir-fry until you for 10 seconds.

Step 3

Now add coconut milk with little water and cook until brown curry paste melts in the coconut milk.

Step 4

Add the bitter gourd and simmer for 4-5 minutes.

Step 5

Adjust salt to taste, simmer until bitter gourd is cooked. Serve with brown rice.
