Tomato and Coconut Rice

300g Basmati Rice 
375ml MA’s Coconut milk
350g Pasta Roma Herb Pasta Sauce 
4 MA’s cloves
4 cm long MA’s Cinnamon Stick
½ onion, sliced 
2 to 3 green chillies slit length ways
2 ½ cups of water 
2 tbsp oil
salt or to taste
 

Step 1

Soak the rice in water for 15 minutes.

Step 2

Heat oil in a deep pan, add the cloves, cinnamon, onion and green chillies and sauté until onion turns golden brown.

Step 3

Reduce the heat and add the rice into the oil. Stir well with spices. 

Step 4

Add water and half cook the rice.

Step 5

Add pasta sauce stir for few seconds and add coconut milk. Adjust the salt.

Step 6

Cover with a lid and cook for 15 minutes.

Step 7

When the rice grains are cooked, fluff with a fork and serve hot with Happy home chili paste.
