2 cups flour
2 teaspoon baking powder
1 tsp MA’s Garam Masala Powder
1 tsp MA’s Mixed Spice Mix
4 eggs, room temperature
1/3 cup curd
1/3 cup kitul honey
Zest from 2 limes
1 teaspoon vanilla essence
220g salted butter, room temperature
250g cups brown sugar
Preheat oven to 180C and line individual cupcakes.
In bowl A – beat butter and sugar until light and fluffy.
In bowl B – mix together eggs, curd, kithul, zest and vanilla.
In bowl C – Sift flour, baking powder and spice mixes in a bowl, add salt and mix well.
Alternatively add the mixture from bowl B and C into bowl A. Continually mix gently.
Pour mixture into the cupcakes and bake until when cake is gently pressed it springs back and a toothpick inserted in the middle of the cake comes out clean. This should be for about 30+ minutes.
Allow to cool on a wire rack and spread with choice of icing.
