Carrot and Herb Pasta

10g Pasta

1 onion, chopped

75g mushrooms, chopped

1tbls basil chopped

2 large carrots cut into ribbons (using a vegetable peeler)

75g Pasta Roma Herb Pasta Sauce

2 tbls oil

1 tsp salt

1/2 tsp pepper

Step 1

Boil pasta, drain and keep aside.

Step 2

Heat the oil in a pan, add onion and sauté for 1-2 minutes.

Step 3

Add the mushrooms, basil, salt and pepper. Cook for five minutes.

Step 4

Add the carrot ribbons, sauté for one minute and stir in the sauce.

Step 5

Continue to cook for 7-8 minutes. Serve warm.

- Add grated cheese for a flavour boost.
