Vegetable Peanut Satay Noodles

2 tbls oil

200g egg noodles, boiled

1 tsp MA’s Garlic Paste

100ml MA’s Coconut Milk

1 large onion cut into wedges

1 tsp Ma's Chilli Pieces (or Happy Home Chinese Chilli Paste)

1/2 a recipe of all-purpose satay

sauce (Refer page no 7)

300g chopped vegetables – any variation of the following (carrot, broccoli, Bok choy, zucchini, bell pepper, mushrooms, cauliflower.)

Salt

Step 1

Heat oil in a pan and saute onion for 3 minutes until slightly transcluent.

Step 2

Add vegetables like carrot, broccoli and saute first, then add the quicker to cook vegetables.

Step 3

Don't over cook as the vegetables should be slightly firm.

Step 4

Add the garlic and chlli.

Step 5

Add the satay sauce, extra coconut milk and stir.

Step 6

Adjust salt to taste and serve immediately with noodles.
