Black Pork Curry

850g boneless pork, 2-3 cm cubes
95g MA’S Fish Ambulthiyal Paste
150ml MA’S Classic Coconut Milk
100ml water
100g grated coconut
3 tbls oil

Step 1

Lightly roast the grated coconut and using a mortar and pestle create a paste.

Step 2

In a bowl combine Ambulthiyal Paste and the pork. Mix well until evenly coated.

Step 3

Heat oil in a pan and fry the onions.

Step 4

Add the marinated pork and fry for 7 minutes.

Step 5

 Add the water and simmer for 15 minutes.

Step 6

Add the coconut milk and mix through the roasted coconut paste.

Step 7

Continue to simmer for 10 minutes or until most of the liquid has evaporated.

Step 8

Serve sprinkled with extra roasted coconut.
