Boil carrots and potatoes. Drain and add leeks and mash.
Heat oil in a pan and mustard seed, green chilli, onions, curry leaves and garlic paste until onions are translucent.
Add cinnamon, Mulligatawny mix, Salt, Pepper, and Chilli flakes and mix well until evenly combined.
Add mixture to mashed potato, carrot, leeks and green chilli and mix.
Adjust salt and put aside.
Mix together the pancake ingredients and place a small amount onto a frying pan and spread to form very thin pancake approximately 15cm in diameter.
To make Chinese Rolls
Lay one pancake on a flat surface and place a small amount of mixture into the centre.
Fold pancake around mixture until it becomes a cylindrical shape.
Dip in beaten eggs and roll in bread crumbs.
Fry and serve with any Dad’s Garden Sauce.
