Onion Lemongrass Curry

3 tbls oil
1/2 tsp MA’S Mustard Seed                                
1 tsp MA’S Garlic Paste  
3 x 4 cm pieces of Lemongrass (more if you like lemongrass!)
250g onion, sliced
2 tbls curry leaves
2 medium sized  tomatoes, chopped
1/2 tsp MA’S Chilli Pieces                                
200ml MA’S Classic Coconut Milk    
Salt to taste

Step 1

Heat oil in a pan and heat mustard until it begins to pop.

Step 2

Add the garilc paste, lemongrass, onion and curry leaves and saute for 1 minute.

Step 3

Add the onion and saute until the onion is cooked well.

Step 4

Add the tomato and chilli pieces and saute for 1 minute.

Step 5

 Add the coconut milk and simmer for a few minutes.

Step 6

Add salt to taste and serve.
