Bread Butter Pudding

30g butter, plus extra for greasing
12 slices of bread
50g sultanas
2tsp MA’s Cinnamon Powder
300ml whole milk
50ml cream
2 eggs
25g sugar
¼ tsp MA’s Nutmeg, grated to taste

Step 1

Grease a deep oven proof dish with butter.

Step 2

Cut the crusts off the bread. Spread butter on one side of each slice of bread & cut diagonally.

Step 3

On the bottom of the dish, arrange a layer of bread with the buttered-side up. Sprinkle a layer of sultanas & cinnamon.

Step 4

Repeat the layers of bread, sultanas and cinnamon, until the dish is full. Finish with a layer of bread.

Step 5

In a pan, heat milk and cream. Don't let it boil.

Step 6

Crack the eggs into a bowl, add three quarters of the sugar and lightly whisk until pale.

Step 7

Add warm milk and cream mixture and stir well, then strain into a bowl.
 

Step 8

Pour the milk and egg mixture over the bread layers and sprinkle with nutmeg and remaining sugar.
 

Step 9

Preheat the oven to 180 C. Place the dish into the oven and bake for 30 minutes, or until the top is golden brown.
