Carrot Halwa

10 Cashews
2 tbsp Ghee
200g grated carrot
200ml MA’s Coconut Milk
¾ cup Sugar
4 MA’s Cardamom pods, crushed 

Step 1

Fry cashews and almonds in 1 tbls ghee until golden brown. 

Step 2

Take the nuts out of the pan but keep the ghee.  In the same pan, add the grated carrot and sauté for 5 minutes on low heat. Keep frying till the carrot shrinks.

Step 3

Add coconut milk, cardamom powder, sugar and mix well.

Step 4

Add the remaining ghee and mix well. Reduce the heat to medium.

Step 5

Keep stirring till it forms to a thick mixture. This will thicken more as it cools.

Step 6

Add the fried cashews and almonds and mix well. Serve cold.
