4 large potatoes,
2 tbls oil
1 onion, chopped
150g sliced sausages/ bacon/ ham
200g Pasta Roma Chili Pasta Sauce
2 tbls fresh basil leaves, chopped
150g grated cheese
Salt and pepper to taste
Step 1
Preheat oven to 180C.
Step 2
Wash potatoes and using a sharp knife cut parallel slits into the potatoes about 1/8 inch apart. (Do not separate potato into slices).
Step 3
Rub potatoes with 1 tbls oil, then sprinkle with salt.
Step 4
Cover potatoes on a paper towel and microwave until just tender, for 7-8 minutes, turning halfway through.
Step 5
Transfer potatoes to baking sheet and bake until for 10 more minutes.
Step 6
Heat remaining oil in a saucepan over medium heat and cook onion and sausages/ bacon, until brown.
Step 7
Stir in pasta sauce, salt and pepper. Mix well and remove from the heat.
Step 8
Top with sausage mixture, grated cheese and basil leaves. Return the potatoes to the oven for an additional 2 minutes, or until the cheese is melted. Serve hot.
