Melt butter, sugar and syrup in a saucepan.
Cool slightly and add egg, sifted flour, baking powder and ginger.
Mix until just combined, if the mixture is a little soft add a tbsp. flour, 1 at a time until it is firm.
Roll out the height of an Rs.5 coin on baking paper and cut out gingerbread men or other Christmas shapes. If you are finding it difficult to roll out, place in the refrigerator wrapped in Clingfilm for 15mins before rolling.
Bake in preheated oven at 180°C until brown, usually 10-12 minutes.
