Apple & Cinnamon Savoury Rice

1 tbls oil 

1/2 large onion, finely diced 

2 red apples, diced 

350g Basmathi Rice 

2” long MA’s Cinnamon Stick 

1/2 cup apple juice 

2 tbls unsalted butter 

1 tbls vinegar 

Salt to taste

 

Step 1

In a deep pot/rice cooker, heat oil over a medium heat and add onion. Fry until light brown.

Step 2

Add the apples and cook until they start to soften. 

Step 3

Add the cleaned rice and cinnamon stick. Cook for 1 to 2 minutes, then add the chicken stock, apple juice, butter, vinegar and salt to taste. Bring to a simmer. 

Step 4

Cover and reduce the heat to low and cook until the rice is tender, for about 20 minutes.

Step 5

Fluff with a fork and adjust the salt as needed. Serve warm.
