Peanut Butter Chicken Curry

2 dried chillies, chopped

½ onion, chopped

2 tbls oil

1 red bell peper, cubed

4 tbls New Beginnings Smooth Peanut Butter

100g unsweetened Yogurt/Curd

1 ½ tbls MA’s Thai Red Curry Paste

1 chicken breast, cubed

100ml fresh milk

50 ml water

Salt to taste

Coriander leaves for garnishing

Step 1

 Heat the oil in a frying pan, add onions and dried chillies. Fry until onion turns light brown.

Step 2

Add the chicken cubes and bell pepper, cook until brown.

Step 3

Stir the MA’s Thai Red Curry paste in for a minute and add the peanut butter, yogurt and water. 

Step 4

When gravy is gently bubbling, add fresh milk and cook for 10 minutes until the chicken is perfectly cooked through and sauce is thickened. (add more milk if you want more gravy).

Step 5

 Adjust salt and garnish with coriander. Serve warm with rice
