2 tbsp vegetable oil
1 onion, finely sliced
1 tsp MA’s Thai Red Curry paste
1 tsp MA’s Garlic Paste
300g cleaned prawns
1 tsp MA’s Tamarind Paste
1/4 cup water
1 tbsp sugar
1 tbsp fish sauce
2 tsp MA’s chilli flakes
(or 2 tbls Dad’s Garden Garlic & Chilli Sauce)
1/2 tsp salt
1/2 cup chopped coriander leaves.
Juice of 1 lime
Heat oil in a pan and add the onion.
Saute for 1 minute then add garlic paste, thai red curry paste and prawns.
Continue to saute until prawns are almost cooked.
Add sauce ingredients and continue to saute over a high heat until prawns are fully cooked and sauce is smooth.
Adjust salt to taste, balance flavour with lime.
Sprinkle with chopped coriander leaves and serve.
