Butter Cake

300g flour

150g butter, softened

3 eggs

225g sugar

3 tsp vanilla

100ml milk

50ml MA's Coconut Milk

3 tsp baking powder

1 tsp salt

1 lime ring, grated


Pani Pol for the center


Butter Icing


140 icing sugar

70 butter, softened

1 1/2 milk

50g jaggary, crushed

1 tsp lime juice

1 tsp vanilla

Brown Sugar

Butter Cake

Step 1

Preheat the oven to 180oC and grease a cake pan with oil paper.

Step 2

Cream the butter and sugar till fluffy and pale in color.

Step 3

Add egg at a time and beat well to combine. Make sure not to curdle.

Step 4

Sieve flour, baking powder and salt together and mix the milk, coconut milk and vanilla together.

Step 5

Now add flour mixture and milk mixture alternatively to the batter.

Step 6

Fold in the grated lime ring, spread in the greased pan and bake for about 45mins or till the cake springs back once you touch.

Step 7

Once the cake is baked unmold in to a wire rack to cool and sandwich the cake.

Step 8

Spread pani pol in the middle.

Butter Icing

Step 1

Cream the butter and add in the icing sugar and beat well.

Step 2

Add milk, jaggary, vanilla, lime juice and beat well.

Step 3

Spread the butter icing on the cake and sprinkle with sugar and cinnamon powder.
