Pasta with Mushroom and Eggplant


300g Pasta Roma Pasta

350g mushroom, sliced

150g eggplant, cubed

1 large onion, sliced

175g Pasta Roma Garlic Pasta Sauce

150ml water

2 tbls oil

25g cheese, grated


1. Boil pasta.

2. Heat oil in a pan and fry the onion and eggplant for 5 minutes.

3. Add mushroom and saute for further 2 minutes.

4. Add the pasta sauce and water; simmer for 5 minutes.

5. Mix in pasta and serve topped with grated cheese.
