Tomato Topped Meatloaf

There isn’t much worse than dry meatloaf. When you use our tomato & pasta sauce topping, the meatloaf ends up deliciously moist and the melted cheese on top is an extra bonus.  
For the Meatloaf 
1 Onion, finely chopped 
2 tsp MA’s Garlic Paste  
100g Pasta Roma Pasta Sauce any variety  
500g Pepper Valley minced beef/chicken/pork  
2 Eggs, beaten 
1 cup Bread crumbs 
1/2 cup Parsley, chopped 
100g Pasta Roma Pasta Sauce 
4 tomatoes, finely diced 
1/2 cup grated New Beginnings Palai Strong Cheese  


Step 1
Preheat oven to 180C 
Step 2
Heat oil in a pan and gently soften the onions.  
Step 3
In a large bowl mix the onions, sauce, minced chicken/beef, egg, bread crumbs, parsley. 
Step 4
Place in a lined loaf pan & place in the preheated oven 
Step 5
While the loaf is baking. Mix together the tomatoes and pasta sauce.  
Step 6
After 30 minutes, pour the sauce mixture on top of the loaf and sprinkle with cheese.  
Step 7
8Bake for a further 30 minutes and then leave to stand for 10 minutes before serving
