Lotus Root Stir-Fry with Pepper Wok Sauce

Ingredients 
2 tbsp oil 
200g lotus root, thinly sliced and soaked in water with a splash of vinegar or lemon juice 
6 cloves garlic, minced 
Dried red chillies, to taste 
2 celery stalks, thinly sliced 
150g cabbage, sliced 
1 onion, sliced 
160g MA's Kitchen Pepper Wok Sauce 
A handful of fresh coriander leaves, chopped 
 
Instructions
Step 1
Peel and thinly slice the lotus root, then soak the slices in water with a bit of vinegar or lemon juice to prevent discoloration. 
Step 2
Heat oil in a wok or large pan over medium-high heat. Add the sliced lotus root and stir-fry for 3-4 minutes until lightly browned and tender. 
Step 3
Add minced garlic, dried red chillies, and sliced onion to the pan. Sauté until fragrant, stirring continuously. 
Step 4
Incorporate celery stalks and sliced cabbage into the wok. Continue stir-frying until the vegetables are tender-crisp, about 3-4 minutes. 
Step 5
Pour in MA's Pepper Wok Sauce, ensuring all ingredients are well coated. Stir-fry for an additional 2 minutes to allow the sauce to meld flavors. 
Step 6
Remove from heat and garnish with freshly chopped coriander leaves before serving.
