String Hopper Kottu with Thai Red Curry

This String Hopper Kottu is a unique fusion dish that blends the classic Sri Lankan kottu with the bold flavours of Thai cuisine. The combination of spring hoppers, vegetables, and a rich Thai red curry paste creates a truly unforgettable taste experience. Ingredients
80g MA's Kitchen Kottu Wok Sauce 
20g Thai red curry paste 
150ml coconut milk  
1 stalk lemongrass, chopped in 2 cm pieces 
2 kaffir lime leaves 
1 tsp garlic, minced  
2 tbsp oil  
300g assorted vegetables (carrot, thibbatu, cabbage, red bell pepper), thinly sliced 
2 eggs 
500g string hoppers (idiyappam) 
1 medium onion, sliced 
2 green chilies, sliced (optional, for extra spice) 
Salt and pepper to taste 
Fresh coriander or spring onions for garnish 
 
Instructions 
Step 1
In a small bowl, combine Thai red curry paste, coconut milk, lemongrass, and kaffir lime. Heat and set it aside. 
Step 2
Heat oil in a large wok or pan over medium heat. Add sliced onions, green chilies, and garlic. Sauté until onions are translucent. 
Step 3
Add the thinly sliced vegetables to the pan. Stir-fry for about 5-7 minutes until tender crisp. 
Step 4
Create a space in the center of the vegetables. Crack the eggs into it and scramble until cooked. 
Step 5
Break the spring hoppers into smaller pieces and add them to the pan. Stir to combine. 
Step 6
Pour the prepared Thai curry sauce over the string hopper mixture. Add MA's Kitchen Kottu Wok Sauce and stir to coat evenly. 
Step 7
Continue cooking for another 5 minutes, or until the spring hoppers are heated through and the flavors are well blended. Garnish with fresh coriander or spring onions and serve immediately. Always test the salt before serving.  
 
Tips 
For a satay flavour, add a spoonful of peanut butter to the Thai red curry sauce. 
To balance the spice, squeeze fresh lime juice over the finished dish. 
Add protein by including cooked chicken, shrimp, or tofu.
