Ingredients
1 tbsp oil
A handful of fresh curry leaves
1 onion, sliced
1–2 green chillies, sliced
200g mushrooms, washed and sliced
1 tomato, sliced
Splash of coconut milk (optional, for a creamier texture)
Instructions
Step 01
Heat oil in a pan over medium heat. Add curry leaves, sliced onion, and green chillies. Sauté until the onion softens and turns golden brown, releasing its fragrant aroma.

Add the sliced mushrooms and sauté for a few minutes until they start to soften.
