Colombo Chicken Curry

Colombo Chicken Curry is a rich, aromatic Sri Lankan curry made by simmering tender chicken pieces in a deeply spiced sauce built on MA's Kitchen Colombo Chicken Curry Paste, slow-cooked with sweet caramelised onions and finished with creamy MA's Kitchen Coconut Milk for a beautifully balanced, medium-heat dish. The result is a fragrant, golden curry with layers of warm spice, subtle sweetness, and velvety coconut richness - a true taste of Sri Lanka ready in under an hour.

Ingredients:

  • 500g chicken, cut into serving sizes
  • 75g MA’s Kitchen Colombo Chicken Curry Paste
  • 2 tbsp oil
  • 2 large onions, sliced
  • 100ml MA’s Kitchen Coconut Milk
  • 125ml water

 

 

Cooking Steps:

1. Marinate Chicken in the MA's Kitchen Chicken Curry Paste.

2. Heat oil in a pan and saute the onion.

3. Add Chicken and stir until evenly browned.

4. Add MA's Kitchen Coconut Milk and water; simmer for 10 minutes and adjust salt to taste before serving.

 

 

Tips: For a more authentic curry at step 2, saute curry leaves, 1 tsp of black mustard seeds & 4 chopped dried chillies.
