This Mushroom Curry is a fantastic example of how simple ingredients can be transformed into a culinary masterpiece with the right blend of spices. The MA's Kitchen Hot Curry Paste takes the guesswork out of seasoning, delivering an authentic Sri Lankan flavour in every bite.

Ingredients

  • 1 tbsp oil
  • A handful of fresh curry leaves
  • 1 onion, sliced
  • 1–2 green chillies, sliced
  • 200g mushrooms, washed and sliced
  • 25g MA’s Kitchen Hot Curry Paste
  • 1 tomato, sliced
  • Splash of MA's Kitchen coconut milk (optional, for a creamier texture)

 

 

Cooking Steps

  1. Heat oil in a pan over medium heat. Add curry leaves, sliced onion, and green chillies. Sauté until the onion softens and turns golden brown, releasing its fragrant aroma.
  2. Add the sliced mushrooms and sauté for a few minutes until they start to soften.
  3. Stir in MA’s Kitchen Hot Curry Paste and mix well, ensuring the mushrooms are evenly coated in the rich spice blend.
  4. Once the mushrooms are halfway cooked, add the sliced tomatoes.
  5. For a creamier curry, stir in a splash of coconut milk.
  6. Continue cooking until the mushrooms are fully cooked and the gravy has thickened to your liking.
