Parippu (Dhal Curry)

Parippu is a creamy, golden Sri Lankan red lentil curry simmered with aromatic spices and finished with a sizzling tempering of MA's Mustard Seeds bloomed in hot oil with curry leaves, red chillies, garlic, and onion. Seasoned with MA's Turmeric Powder and MA's Unroasted Curry Powder, then enriched with MA's Classic Coconut Milk, this soul-warming dal is rich, velvety, and gently spiced, a beloved staple of Sri Lankan home cooking that pairs beautifully with rice or roti.

Ingredients:

  • 100g red lentils, washed
  • ¾ tbls MA’s Kitchen Turmeric Paste
  • 1 tsp salt
  • 2 tbls oil
  • 5 curry leaves
  • 1 tbls MA’s Kitchen Mustard Seed
  • 1/2 tbls MA’s Kitchen Fenugreek
  • 1/2 tbls MA’s Kitchen Sweet Cumin
  • 3 red chillies, chopped
  • 3 garlic cloves
  • 1 small onion, sliced
  • 1 cup MA’s Kitchen Classic Coconut milk
  • 1 ½ tbls MA’s Kitchen Unroasted Curry Powder
  • Water, as required

 

 

Instructions:

  1. Add lentils, turmeric, and salt to a saucepan and fill with enough water to cover the lentils.
  2. Cook over a medium heat for about 10 minutes until the lentils are soft.
  3. In a different pan, heat oil and fry the curry leaves, mustard, fenugreek, sweet cumin, and chilli until fragrant.
  4. Add the garlic and onion and fry until slightly brown.
  5. Add the cooked lentils to the pan and cook for 2-3 minutes.
  6. Add the coconut milk and curry powder and continue to simmer for 3 minutes.
  7. Adjust salt to taste and serve.
