Tandoori Cauliflower Wraps

Turn your favourite vegetarian filling into a quick meal with these Tandoori Cauliflower Wraps. Soft, warm naan roti is stuffed with spiced tandoori cauliflower, crunchy cabbage, sliced tomatoes, and cucumbers, then topped with a cool mint yogurt sauce. It’s a tasty, mess-free meal for any day of the week. 

 

These are great for easy Lunchboxes, pack these tandoori cauliflower wraps for school or work and turn your tandoori masala into a handheld meal. Wrap each one in baking paper or foil and pack the sauce separately to add at lunchtime. This keeps the bread/wrap from going soggy.

Ingredients 

  • 250g tandoori cauliflower, cooked (put link to recipe) 
  • 100g red cabbage or lettuce, chopped 
  • 100g tomatoes, diced 
  • 100g onions, sliced 
  • 150g Cucumber, sliced 
  • 4 – 6 Naan 
  • Curd Sauce (Curd, Chopped mint leaves, coriander leaves, green chillies, lemon juice) 
  • Salt  

 

Cooking Steps

  1. In a mixing bowl, combine curd, chopped mint leaves, coriander leaves, green chillies, lemon juice, and salt together  
  2. Assemble – top a warmed naan with tandoori cauliflower, sliced vegetables of choice, and the herb curd. 
  3. Roll it gently and enjoy! 
  4. The curd sauce also tastes great when the curd is swapped out with mayonnaise.
