Ingredients
Dressing
1/4 cup MA's Kitchen Coconut Milk
1 tsp MA's Kitchen Thai Red Curry paste
2 tsp dark soy Sauce
Juice from 1 lime
1 tsp brown sugar
1 tsp Dad's Garden Garlic & Chili Sauce
For the salad
1/2 cup chopped cucumber (g)
1/2 cup chopped red pepper
4 green onions,
6 basil leaves, chopped
2 cups rice noodles, cooked
1/4 cup cashews, toasted and crushed
Instructions
Step 1
In a small saucepan heat sugar curry paste and coconut milk.
Step 2
Heat until sugar has dissolved. Remove from heat and whisk in other ingredients. Put aside.
Step 3
Mix together salad and dressing just before serving. Garnish with cashews and serve.
