1/4 cup MA's Coconut Milk
1 tsp MA's Thai Red Curry paste
2 tsp dark soy Sauce
Juice from 1 lime.
1 tsp brown sugar
1 tsp Dad's Garden Garlic Chili Sauce
For the salad
1/2 cup chopped cucumber (g)
1/2 cup chopped red pepper
4 green onions,
6 basil leaves, chopped
2 cups rice noodles, cooked
1/4 cup cashews, toasted and crushed
1. In a small saucepan heat sugar curry paste and coconut milk.
2. Heat until sugar has dissolved. Remove from heat and whisk in other ingredients. Put aside.
3. Mix together salad and dressing just before serving. Garnish with cashews and serve.
