Boil pumpkin, potato, carrots in salted water and add eggplant after few minutes and boil well.
In a separate bawl boil dhall with required amount of water.Add boiled vegetables, tomatoes, curry mix, coconut milk and let it simmer.
Heat oil in a pan & saute onion, mustard seeds, dry chillies, cumin and curry leaves.
Add the vegetable mixture to the pan and temper well.
Adjust salt to taste.
