Ingredients:
50g pumpkin, cubed
50g eggplant, cubed
50g potato, cubed
50g carrot, cubed
100g dhall
1 onion, sliced
2 tomato, sliced
1 sprig of curry leaves
3 dry chillies, chopped
1 cup MA’s Coconut Milk
2 1/2 tsp MA’s vegetable Curry Mix
1/2 MA’s Mustard Seeds
1/2 MA’s Cumin Seeds
Salt to taste
Steps:
1. Boil pumpkin, potato, carrots, salted water and add eggplant after few minutes and boil well.
2. In a separate bawl boil dhall with required amount of water.Add boiled vegetables, tomatoes, curry mix, coconut milk and let it simmer.
3. Heat oil in a pan & saute onion, mustard seeds, dry chillies, cumin and curry leaves.
4. Add the vegetable mixture to the pan and temper well.
5. Adjust salt to taste.
